Strawberry Cheesecake Sponge, Blueberry and Macademia Flapjacks, Courgette Loaf
The Strawberry Cheesecake Sponge was delicious and similar to the previously made Rhubarb and Custard Cake. Its from the bbcgoodfood magazine. The blueberry/nut flapjacks were very nice and from the bbcgoodfood website. Finally the Courgette loaf, from the bbcgoodfood July magazine was nice but not amazing. Nice cream cheese frosting but no nuts in the recipe and the last courgette cake I made ( Hummingbird Bakery) was packed with lots of pecans which really added to the texture and flavour. This recipe also advised to squeeze out as much courgette juice as you can...so much so it made the loaf a little dry. All very edible but I was comparing it to the Hummingbird recipe which was wowza!.

Rhubarb&Custard Streusel Tart, Coconut Tartlets, Oaty Raisin Cookies
Doesn't the Rhubarb tart look lovely....well its not! My tart tin was too small for all that custard, but that didn't stop me continuing to soak the pastry every way possible! (BBC Good food)
The coconut mini tartlets and cookies luckily didn't disappoint!.

Chocolate Chip Cookies (Milk&Dark), Anzac Cookies
Well if you like the M&S version then these should be your go to recipe. Found on bbcgoodfood website. I did a mix of half milke chocolate ones and half dark chocolate. Was making them for my chocoholic pal Lisa in Cork and added a few in for myself for good measure. The other cookies are Anzac cookies. A sort of buttery oaty coconut cookie. Same website for recipe and really really easy to make.

This was a fail I'm afraid! But it was because I thought I had Rye flour at home and instead had Spelt flour. The bread was just too tough so note to self.....substituting different flours does not work!

Cake Morning at Lilys!
I decided to be a social butterfly and invite my lovely work pals over for a very sweet morning of cakes, chats and giggles. I chose a varied mix...of cakes, not friends! Blueberry and Sourcream Cake with cream cheeses frosting ( bbcgoodfood), Coffee and Walnut cake ( Nigella), Chocolate Guinness Cake (Hummingbird Bakery), Pecan and Bourbon Brownies ( Dan Lepard Cookbook), Peanut Butter Choc Chip Oat Cookies.

Peanut Butter Choc Chip Cookies
These cookies are made with peanut butter, rye wheat flour and oat flakes. I left them in the oven for double the time and although I love a crunchi cookie I should have left them in for the recommended 20 mins.
The recipe is from my new Dan Lepard Cook book and I will definately be making them again. With more oats and chocolate of course...or perhaps leave the choc chips out and dip half the cookie in melted chocolate instead.
A recipe to be customised a little but a definite thumbs up.
It sank! Hummingbird Chocolate Malt Cake
I wasnt going to post this cake ( clearly from my photo of it in the fridge above the soup and eggs!) but I wanted to share the good and the bad. Now dont get me wrong, this cake is totally edible but when all three sponge layers sink and you dont know why, its very frustrating!
Like alot of the Hummingbird Cake recipes...its a very sweet cake. The malt cream cheese frosting is very very good however.
I wouldnt make it again as it's just too sweet and thats coming from a sweet tooth. But for a malt/malteser fan its a must!.

Carrot and Walnut Cake
I am forever trying to find the best carrot cake recipe. The above is very tasty but the frosting was too sweet and I prefer make to separate cakes than splitting one in two as it just doesnt bake as well. This recipe was from a blogger I love and its is very nice but I prefer more of a cream cheese taste to the frosting than a sugary icing sugar one. Anyhoo, it will all be demolish and in the meantime I have found a Mary Berry recipe I am going to try this weekend. On a mission to find my 'go to' cakes this year.
