Oreo Cookies

What to do with a White chocolate easter egg. Make some ganache and some oreo cookies to sandwich it in! I found a ganache a little gloopy but the cookies are great straight from the freezer and left for 10 minutes.

Baked Chocolate Cheesecake


Well I had a tin of condensed milk in the fridge and wanted to use it up. I found this recipe for baked chocolate cheesecake on the carnation website. Ok so its very very rich, nearly like a slice of truffle on a biscuit base...whats not to like! Even for me a tiny slice is more than enough. The recipe used 300g of melted choc as opposed to other recipes I have seen with 100g. I found the mix a tiny bit sticky but still very indulgent and will all be consumed by me, hubby and family but I think over a longer period of time! I have seen another recipe with half the chocolate and using a mix of ricotta and cream cheese and sour cream which I like the sound of. Will keep you posted.

Sticky Stem Ginger Cake with Lemon Drizzle


The bbc good food website never seems to let me down. After a long hunt for stem ginger which I ended up getting in Fallon and Byrne the making of this cake was easy and well well worth it. It will keep for 2 weeks in an airtight container and gets better with age. Who doesnt love ginger cake and the tangy lemon drizzle and kick from the stem ginger really works.


Cherry, Almond and Chocolate Chip Oaties

I looked everywhere for sour dried cherries but no luck. I settled with standard dried cherries and everyone seemed to like them. The recipe is from the Leon baking book and they went down a storm with my hubby and parents....but I think I can do better. Will add dark chocolate instead of milk next time as that will go really well with the cherries.............and I'm still going to hunt for sour dried cherries!

Walnut, Courgette and Cinnamon Layer Cake

This is from the Hummingbird Bakery book and it was absolutely delicious!!! Hubby loved it and thats rare with him not having a sweet tooth. Their frosting was terribly sweet so I changed it to a cream cheese frosting which was delicious. A moist, nutty sponge and refreshing frosting. You can also go the extra mile and make the sugared walnuts for decoration. One of my recent favourites!


Blueberry And Lemon Curd Muffins

This is the Hairy Bakers recipe and they were fine but terribly light and fluffy and far to healthy for my cake taste. My sister would probably love them but my baking vanity wouldnt allow me to give her any as I didnt think they were that great!

Rhubarb and Custard Cake

Thanks to a friend at work donating her rhubarb to me as mine has been attacked in our mini garden I was still able to make this favourite of mine. It's rich and light at the same time and it's a popular recipe from the BBC good food website. Highly recommend even if hubby wasnt overly impressed......although jelly and ice
cream is his idea of perfection  so I wont take it personally!

More chocolate cake!

I can't help it with this guardian recipe by Felicity. It's my fav chocolate cake recipe and this cake was for a recent anniversary. I will mix it up soon and try a new recipe.


Mars Bar Rice Krispie buns-Avoca

I think these are my favourite thing to eat...ever! I never care how difficult or easy something is to make aslong as it tastes great! I also did a few customised versions for my nieces. A must for any choc caramel fan and so easy to make. Avoca recipe.

Lotsa Cookies!

 I cant ever seem to make just one batch of cookies. As my husbands favourite are an essential every time ( I get warned) I always want to try something new. The oatmeal and raisin cookies are his fav. Then I found the 'best chocolate chip cookie' recipe from the Guardian food website. Finally I made some chocolate/fruit/nut/choc chip darker cookies from a favourite no name book of mine. Not all have been tested but I'll come back to you! Am meeting my pal Lisa tomorrow who loves all things chocolate so I will let you know if she approves.
